These are, by far, the BEST muffins I've ever tasted. Moist, sweet, and loaded with cream cheese. Yeah, baby...these are delicious!!!
What you'll need:
3 cups all-purpose flour
2 cups sugar (divided)
4 teaspoons baking powder
1 teaspoon salt
2/3 cup milk
1/2 cup vegetable oil
2 large eggs
8 ounces cream cheese, softened
Topping:
1/4 cup all-purpose flour
1/2 cup sugar
1/8 cup butter, softened
Directions:
Preheat oven to 375°. Grease/spray a 12-cup muffin tin and set aside.
In a large bowl, combine flour, 1 cup of sugar, baking powder, and salt. Once combined, make a well in the center,
In a separate bowl, stir together milk, oil, and eggs. Pour into the dry ingredients. Stir until dry ingredients are moistened. Batter will be thick.
Combine cream cheese and 1 cup of sugar. Fold half of this mixture into the muffin batter.
Spoon batter into greased muffin pan, filling cups 2/3 full. Spoon the remaining cream cheese mixture onto the muffins, press the mixture into the middle of each muffin.
Top (generously) with crumb topping and bake for 30 minutes or until tops are golden brown.
Makes 12 muffins.
