Sweet Southern Cheese Muffins

Like most southerners, we love good barbecue.  Also, like most southerners, we know that good barbecue must be accompanied by a good piece of bread.  It can be garlic bread, texas toast...or, as my dad says, "a piece of light bread."  These mini sweet muffins are perfect for "sopping" up that extra barbecue sauce that's lingering on your plate.




What you'll need:

1 1/2 cups all purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup  milk
1 egg (beaten)
4 tablespoons unsalted sweet cream butter
1 cup mild shredded cheddar cheese
1/4 teaspoon vanilla extract

Directions:

Preheat oven to 400°.  Spray 24 count mini-muffin pan with no stick cooking spray.

1.  Mix together flour, sugar, baking powder and salt.
2.  Add butter.  Mix well.
3.  Beat egg and pour into mixture along with milk.
4.  Stir in vanilla and fold in cheese.
5.  Bake in 400° oven for 15 minutes.

Makes 24 mini muffins.
